A Mature Rib - Eye takes some beating, it is soft, juicy and tasty. Always accompanied by some inter-muscular fat the steak is not a lean cut. It is the fat that gives it its rich flavour. Look for a dark plummy colour and creamy marbled fat through the muscle, it is best when cut with some depth.

Cooking Advice

To cook simply grill on a medium heat turning every two minutes until the steak is cooked to your liking.
The size of the steak will determine how long you will need to cook your steak for and your preference for rare, medium or well done.
Why not try adding a peppercorn or Diane sauce to your steak to add extra flavours and serve with new potatoes or crispy chips and vegetables.
