Brisket is not as popular as it once was, leisure time is at a premium so the 'slow - roast or pot-roast' has lost favour. This is a shame because the meat offers great potential, its suitability for slow roast makes cooking times very flexible, the meat itself is sweet, the muscle firm and the flavour strong.
