We use a fresh pork tenderloin cut it to create a pocket, fill it with Cranberry or Sage & Onion stuffing, wrap it in Palma ham and then drizzle it in a lemon & coriander marinade.The marinade tastes sweet, with a delicately sharp sauce and red chilli plus a garnish of pineapple.
To cook simply oven bake for 50 minutes on 160 C or gas mark 3.
