Cooking Advice

- If you wish to roast the joint, make sure that you ask your butcher to 'score' the rind well, then cook it for 90 minutes on gas mark 5 (160C). Take the joint out of the oven about 15 minutes before it is fully cooked and either baste it with maple syrup or honey and sprinkle some brown sugar on the rind. Place it back into the oven and bake for 15 minutes.
- Alternatively, place the joint in a pan of water, bring the water to gentle simmer and then discard it, refill the pan and cook for 45 minutes. To sweeten the joint take it out of the pan and apply the sweeteners, then bake in the oven for 45 more minutes.
