Offal

Offal has lost favour in the last decade or so. Liver and onions served with mash & peas was a very popular dish in my youth, my brothers and I really enjoyed it!
Ox-liver could be a little bitter if it was from a very mature animal, but lambs liver was a firm favourite. Steak & kidney puddings and pies were staple and really brightened up the meat.
Grilled lambs kidneys often featured on a breakfast plate and tripe and onions was a firm Northern favourite.
