Only the very best cattle that meet strict and tightly controlled quality standards are individually selected by skilled staff to carry the Mathers Black Gold mark.
Once selected the beef is traditionally matured on the bone for a minimum of 14 days before being processed, either on the bone or as boneless cuts. All beef is then clearly identified to give buyers complete reassurance of quality and traceability.
Rib of Beef on the bone is a magnificent joint, it really works when the weight is over 2 Kg. If you would like a joint of rib but do not want to purchase a joint of this size, please consider a joint of 'rolled rib'.
